Poor Man's Brioche with a dose of Rich Danish!




We're into our fourth week of Bread Baker's Apprentice (BBA) my weekly bread baking group. And this week the assignment was Brioche. There were three different versions of Brioche to choose from, the difference was in the amount of butter; Rich Man's Brioche with 2 cups of butter, Middle-Class Brioche with 1 cup butter and Poor Man's Brioche with 1/2 cup butter. Since I was not sure if we would like Brioche or not I decided to save the butter and made the Poor Man's Brioche!

To begin with, I made one large, round loaf of Brioche. And a Pastry Sous Chef on Twitter, @niteweng, suggested I make Danish with the remaining dough. The Brioche was good but the Fresh Strawberry Danishes were outstanding!

I've made Danish before and used the same technique with rolling out the dough and layering fresh fruit. Then rolling up the dough and slicing into danish. You can find the technique including a step-by-step here. Caution, this link goes to a post when I first began my blog and well..you'll see a huge difference from then to now. ;)

Wow, agreed, the Danishes are droolable.

I rarely work with yeast, in fact the only things I ever recall making apart from bread are Stollen and Hot Cross Buns. This really encourages me to be more adventurous though!

The danishes look absolutely gorgeous! I wish I could grab one now. Strawberries are my favourite fruit and I'm so envious of your berries for our season is long over!

YUM! I was planning on making the Middle Class and making various filled rolls and sweets now that May (the month of no-sweets!) is over :) You've definitely inspired me to try something like your danishes!

Wow, those look awesome! I never would have thought to add strawberries to danish. I'm going to make my brioche this weekend. Probably a loaf and either snails or a coffee cake ring. Mmm.

Sorry, I cannot make these because I would eat FAR TOO MANY of them...these look so delicious! The bread looks lovely, too. I am going in on brioche tomorrow, but making it just in loaves and weeble wobble shapes as I don't want to be too tempted with the sweet versions. There is just so often a girl can be expected to say no to these types of things. Yours look way way too too too good.
