Bits-o-Cupcake



I dearly love to send my baked goods to my 3 nieces but mailing cupcakes is a problem. And I just don't trust the USPS with cupcakes with any sort of frosting. and cupcakes sans frosting just does not cut it...Not from Aunt Michelle! The girls would be terribly disappointed if I did not decorate their cupcakes.



But a few months ago I discovered a fabulous idea and one that would solve my cupcake mailing problem. I found Bakerella and her Cupcake Pops . I was thrilled! Not only did her Cupcake Pops solve my mailing problem but any thing covered in chocolate is right up my alley!!

I will not repeat Bakerella aka Angie's recipe nor her instructions but I did make mine a bit differently then Angie.



Instead of using ready-made Cream Cheese Frosting I just creamed 4 oz cream cheese with 1/4 c. sugar and mixed this into a Duncan Hines Devil's Food Cake Mix that I found in my cabinet. I know I have the Baked From Scratch Logo on my blog and where this boxed cake came from I have no idea. But it was there and I wanted to use it somehow. I only baked an 8" by 8" cake and used the rest of the batter for regular cupcakes. The 8" by 8" cake and the pseudo cream cheese frosting made 15 Bits-o-Cupcake which is plenty! And the taste is wonderful and my nieces will love 'em!

Thank You so MUCH!!!! These are so cute--the girls loved them--and I have to admit, I had a couple myself! Just delicious :)

Travel was successful--but Aunt Michelle packages all our goodie boxes with great care :)
