Soft Pretzels and the Minnesota v. Chicago Football Game


I love football and have always looked forward to the season. And every year I plunk down my money for season tickets. But geesh, the Chicago Bears are absolutely in the toilet this year! I don't mind when my team loses a game but when they play SOOOooooo bad, it really is embarrassing. So when it came time for the Minnesota v. Chicago game I knew I had to soften the blow of another loss and decided to make some Soft Pretzels to munch on during the game.

The big, giant mall pretzels, oozing with yellow mustard and encrusted with way too much salt, are not my favorite thing in fact the smell is disgusting. So when I made my Pretzels I used very little salt and of course went overboard sprinkling with seeds. And I eliminated everything in the water bath and just added 2 TBL of Barley Malt Syrup. The Pretzels were DE-licious and I would make them again and again!


By the way, the Bears won the Minnesota game, 36 to 30, in OT. It was great!

Pretzels
Recipe adapted from my friend, Nancy


1 package active dry yeast
2 tablespoons brown sugar
1 1/4 teaspoons salt
1 1/2 cups warm water
3 cups all-purpose flour
1 cup bread flour

For the water bath:
2 quarts water
1/4 cup amber beer
1/4 cup baking soda
1/4 cup packed light brown sugar

I eliminated all the above for the water bath and just used 2 qts of water and 2 TBL of Barley Malt Syrup.

Toppings:
4 TBL melted butter
Kosher Salt, Poppy Seed, Pepitos, Parmesan Cheese, Sesame Seeds, Sunflower Seeds or anything you want.

Makes 12 Pretzels

In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water.

Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, and turn to coat the surface. Cover, and let rise for one hour.

After dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin or thinner. Twist into a pretzel shape and place on a baking sheet. Cover and let rise until doubled.

Simmer the pretzels: In a 10-inch-wide stainless-steel pot, combine the water, beer, baking soda, and brown sugar and bring to a simmer. Place 2 pretzels at a time in the water bath. Cook for 10 seconds and flip, using a skimmer or slotted spoon. Cook for another 10 seconds, and with the skimmer, lift above the pan to drain. Then transfer to a parchment lined cookie sheet, rounded sides up.

Brush pretzels with melted butter and sprinkle with garlic powder, Parmesan cheese, sugar/cinnamon, coarse salt, etc., be creative.

Bake at 450 degrees for 8 to 10 minutes, or until golden brown. Brush with additional melted butter, if desired. Serve warm.

Snow-flecked Brownies


It is so cold outside! We seem to be having bitter cold weather where temperatures are going below 20 degrees and then the next day is a gorgeous, brisk fall day. I know this is typical for the Midwest but geesh already..make up your mind!

Being we're having such wild temperature swings with many record breaking colds, I though Nigella's recipe for Snow-Capped Brownies was in order. And I was ready for an ooey gooey, fattening, chocolate snack! In fact so much in the mood for something fattening that I decided to throw in some Mascarpone Cheese. And they were rich and gooey and delicious!

I did cut this recipe in half and made it in an 8"by8" baking dish. Nigella chose white chocolate dots as her snow and added to the mix before baking. But for my Illinois snow I grated white chocolate and sprinkled it on top and because we're still technically in fall, I added some colored leaves as well.

Snow-flecked Brownies
Recipe adapted from Nigella Lawson

13 ounces unsalted butter
13 ounces best-quality dark chocolate
6 eggs
12 ounces sugar
1 tablespoon real vanilla extract
1 1/2 cups plus 2 tablespoons all-purpose flour
1 teaspoon fine salt
9 ounces white chocolate chips, or good white chocolate, chopped (I skipped)
Approximately 2 teaspoons powdered sugar, for dusting (I skipped)

My additions:
1/2 c. Mascarpone Cheese, room temperature
Grated White Chocolate
Fall sprinkles

Preheat the oven to 350 degrees F.

Line the sides and base of a 13 by 9 by 2-inch baking pan with foil or parchment paper.

Melt the butter and dark chocolate together in a large heavy based pan over a low heat.

In a bowl or large measuring glass, beat the eggs together with the sugar and vanilla extract. Blend in the softened Mascarpone Cheese.

Allow the chocolate mixture to cool a little, then add the egg and sugar mixture and beat well. Fold in the flour and salt. Then stir in the white chocolate. Beat just to combine and then scrape into the prepared pan.

Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey.

To serve, cut into squares while still warm and pile up on a large plate, sprinkling with powdered sugar pushed with a teaspoon through a small sieve and dotting with birthday candles as you go. Set alight and enjoy the festive scene.

I topped with Ganache, recipe below. Then sprinkled with grated white chocolate and leaf sprinkles.



Chocolate Ganache

8 ounces bittersweet chocolate
1 cup heavy cream
1 teaspoon vanilla
pinch salt

Place the chocolate in a heat proof container, I use my glass Pyrex 4-cup measure. Heat the cream in the microwave until it's just hot. Pour the hot cream over the chocolate and gently stir until the chocolate is completely melted. Stir in the vanilla and salt.

BBA - Lavish Crackers





This week for Bread Baker's Apprentice we made Lavish Crackers. I was happy to see this on our agenda because I make a double batch of crackers at least every ten days or so but I cut them into long breadsticks. We love my breadsticks and not only eat them with dinner but as a snack, with soup or salad and I've even been known to grab a few on my way out the door for a quick snack in the car.

We made Peter Reinhart's Lavish Crackers for Daring Baker's in Sep '08 and you can see my interpretation of the recipe here. At the time of the Daring Bakers Challenge we were just given the recipe with no pictures for reference so I was not aware of Reinhart's wonderfully fun top striping for the Lavish! As soon as I saw the stripes I knew I had to try it! For the striping I used poppy seeds, sesame seeds, paprika, kosher salt and caraway seeds.

Lavish Crackers
Recipe adapted from the "Bread Baker's Apprentice" by Peter Reinhart

1 1/2 cups unbleached bread flour or gluten free flour blend (If you use a blend without xanthan gum, add 1 tsp xanthan or guar gum to the recipe)
1/2 tsp salt
1/2 tsp instant yeast
1 Tb agave syrup or sugar
1 Tb vegetable oil
1/3 to 1/2 cup + 2 Tb water, at room temperature
Poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, or kosher salt for toppings

1. In a mixing bowl, stir together the flour, salt yeast, agave, oil, and just enough water to bring everything together into a ball. You may not need the full 1/2 cup + 2 Tb of water, but be prepared to use it all if needed.

2. For Non Gluten Free Cracker Dough: Sprinkle some flour on the counter and transfer the dough to the counter. Knead for about 10 minutes, or until the ingredients are evenly distributed. The dough should pass the Windowpane Test and register 77 degrees to 81 degrees Fahrenheit. The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), satiny to the touch, not tacky, and supple enough to stretch when pulled. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.

2. For Gluten Free Cracker Dough: The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), and slightly tacky. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.

3. Ferment at room temperature for 90 minutes, or until the dough doubles in size. (You can also retard the dough overnight in the refrigerator immediately after kneading or mixing).

4. For Non Gluten Free Cracker Dough: Mist the counter lightly with spray oil and transfer the dough to the counter. Press the dough into a square with your hand and dust the top of the dough lightly with flour. Roll it out with a rolling pin into a paper thin sheet about 15 inches by 12 inches. You may have to stop from time to time so that the gluten can relax. At these times, lift the dough from the counter and wave it a little, and then lay it back down. Cover it with a towel or plastic wrap while it relaxes. When it is the desired thinness, let the dough relax for 5 minutes. Line a sheet pan with baking parchment. Carefully lift the sheet of dough and lay it on the parchment. If it overlaps the edge of the pan, snip off the excess with scissors.

4. For Gluten Free Cracker Dough: Lay out two sheets of parchment paper. Divide the cracker dough in half and then sandwich the dough between the two sheets of parchment. Roll out the dough until it is a paper thin sheet about 15 inches by 12 inches. Slowly peel away the top layer of parchment paper. Then set the bottom layer of parchment paper with the cracker dough on it onto a baking sheet.

5. Preheat the oven to 350 degrees Fahrenheit with the oven rack on the middle shelf. Mist the top of the dough with water and sprinkle a covering of seeds or spices on the dough (such as alternating rows of poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, kosher or pretzel salt, etc.) Be careful with spices and salt - a little goes a long way. If you want to precut the cracker, use a pizza cutter (rolling blade) and cut diamonds or rectangles in the dough. You do not need to separate the pieces, as they will snap apart after baking. If you want to make shards, bake the sheet of dough without cutting it first.

5. Bake for 15 to 20 minutes, or until the crackers begin to brown evenly across the top (the time will depend on how thinly and evenly you rolled the dough).

6. When the crackers are baked, remove the pan from the oven and let them cool in the pan for about 10 minutes. You can then snap them apart or snap off shards and serve.

Do's and Dips


I don’t know if it’s because of the increase in temperature and gorgeous summer days but I’ve been making the best dips lately! They’re so delicious and colorful, it’s almost a shame to scrape the last bit from the bottom of the bowl!

Deeba, a friend on twitter and author of Passionate about Baking, told me about a wonderful dip that she had recently made. As soon as I saw the gorgeous color I just had to make it. I found a good recipe on Dinner with Julie and of course proceeded to change the recipe which I have to do. I think it was about 6 weeks ago that Deeba pointed out the Romesco Dip and I’ve made it four times already. We love it! The gorgeous intense color is just a preview to the fabulous taste!

My second dip is just something I threw together to serve along with the Romesco Dip. I wanted something light with a unique taste to contrast the 2 dips. My Olive and Parmesan Dip was perfect and very good with my homemade Breadsticks and Ciabatta Bread!

Both dips would be wonderful for an appetizer or an afternoon snack or even something to munch on while watching a football game.

Romesco Dip

1/4 cup sliced or slivered almonds, or half almonds and half pine nuts
2 whole garlic clove, peeled
1 cup of unseasoned bread crumbs
2 sweet red peppers, roasted
1 TBL. red wine or sherry
1 TBL balsamic vinegar
1 tsp. paprika
salt to taste
1/4 c EVOO, you may need to add more (EVOO=Extra Virgin Olive Oil)

Turn the broiler on High and move a oven shelf closer to the broiler.

Clean out all the seeds from the sweet peppers. Cut each pepper into thirds and then slice so that pepper will lay flat. Line a baking pan with aluminum foil. Place the pieces of red pepper in the baking pan and put baking pan in oven to broil. I only broil until the peppers start turning dark. Careful that you don’t burn the peppers! I do not peel the peppers because so much taste is in the broiled skin.

While the peppers are broiling add 2 TBL EVOO to a small frying pan. Over medium low heat sauté garlic cloves until golden brown and soft. Remove garlic cloves to cutting board and mash with a fork. Set aside.

Add almonds to the small frying pan and toast for about 2-3 minutes until just slightly golden. Remove from pan and cool.

In a food processor add bread crumbs, broiled red sweet peppers, mashed garlic, toasted almonds, vinegar, wine, paprika, and EVOO. Pulse until everything is minced fine and well blended.

Makes between 1-2 cups.



Olive and Parmesan Dip
Recipe developed by Big Black Dog

1/2-3/4 c. EVOO (EVOO=Extra Virgin Olive Oil)
4-5 Black and Green Olives, sliced thin
1-2 TBL of grated fresh Parmesan Cheese
Freshly ground Black Pepper

Thinly slice the olives. Pour EVOO into a small serving bowl. Add sliced olives and pepper. Garnish with Parmesan cheese and freshly ground pepper.
