Welcome to the 9th HBinFive Bread Braid





This week for our HBinFive Bread Braid we made Gluten-free Bread. I have to say that this was the strangest bread recipe I've ever made and I've made quite a bit of bread! The bread did not taste badly at all and was actually good toasted with lots of butter and if we were having guests that had a wheat restrictive diet, I would not hesitate to make this bread! Mr. Tastebuds said that "it tasted better then Wonder Bread"

Like I said the taste was not that bad but the texture was dry probably due to the amount of cornstarch in the recipe. But I'm going to play around a bit and substitute some of the bean and nut flours and maybe add butter or sour cream just to see if I can improve the texture a bit. But I am certainly more sympathetic to people with Celiac Disease and food allergies now. The dough rose and baked beautifully as you can see from the below photo.

I did make some changes to the recipe. For 3 1/2 c. cornstarch I used 2 1/2 c. cornstarch and 1 c. Garbanzo Bean Flour. I skipped the xanthan gum altogether and I used Fresh Yeast.

And I made my very favorite bread, Italian Semolina, from "Artisan Bread in Five Minutes a Day" which made scrumptious Grilled Cheese Sandwiches!

Michelle, I love how your bread turned out and hope you'll post the changes and or additions you make to the original recipe. I have extended family that require gluten-free so I have the need to bake for them-- just not in the last two weeks!

Hmmm, I've been checking out gluten/dairy free recipes lately- the baby boy I watch has been diagnosed on the autism spectrum and his parents are trying to go gluten and dairy free to see if it makes a difference. The one big issue with the breads is dryness

My son is allergic to many things, wheat being one of them. We have tried a lot of gluten free flours and mixes and never really had a lot of success with them. He's only 3 years old now, so maybe he'll grow to like it.

That being said, the texture of your gluten free loaf looks incredible!

My grand daughter has Celiac disease and I have learned that it is not only the sensitivity to wheat, but also some of the ingredients used for instance, use only Worchestershire Sauce... it is gluten-free. I know this is not in bread but I am referring to other recipes. There are tons of food items that have gluten that we are not aware of.
That sandwich looks fabulous and hope to try the bread recipe too someday. Thank you for focusing on this issue. Anyone who has Celiac disease or knows someone with it knows how challenging it can be.

I hope I have worked this out right. I have only just joined and had it in my mind to make the Cinnamon Swirl Bread. Hopefully by the next challenge I will know better what I am doing and cook the right bread and from the right book LOL you will have to forgive me for my senior moments ;)

I am very keen on this no knead type of bread cooking.

I've never tried making gluten-free bread because I don't get the alternate flour and xanthan gum, etc. Your bread does look good.
And those grilled sandwiches make me hungry. Going to have my lunch!

I finally made the carrot bread, and it was good. Didin't have the time to post this time, but I'll be there at the end of the month.
Btw, I finally got around to posting one of the jams I made. Shall be posting the rest this month!

Michelle, I love Mr Tastebud's comment - it tastes better than Wonder bread.

This sounds like a great recipe for people that need to eat gluten free. Grilled cheese sandwiches are always a winner in my book.

Your gluten-free bread and grilled cheese sandwich looks wonderful. I've been out of town so I didn't get the chance to make the bread for this braid. However, I did make pizza in a neat place (using HBinFive dough) so I'm submitting that post for this bread braid. I'm going to try the gluten-free bread for the next braid. Happy Baking!

That grilled cheese sandwich looks amazing! I just bought ABin5 so I will definitely have to try this recipe next. I have made about 5 batches of the master recipe in the past couple weeks and we all love it. I made the Sticky Pecan Caramel Buns instead of the gluten free bread.

I decided not to make the gluten free recipes since we have no dietary restrictions but I'm happy to know that should any of our family develop gluten intolerance there are wonderful recipes to try!

I turned some of the Cinnamon Swirl Brioche into French Toast this morning. I added some ginger emulsion, just a couple of drops and the flavour with some maple syrup as well was great. I have put the photos up on my blog if you want to peek. :)
