Potato Chip Cookies


My Mom was not an ordinary 1960's cook or homemaker. She would not allow TV Dinners although we begged her to buy us those yucky things every time we were at the grocery store. Mom would not let us eat sugary foods for breakfast like Fruit Loops or Captain Crunch, it was either Cheerios, Corn Flakes or Oatmeal! And she never, and I mean never, made anything from a box. My Mom also canned all summer long, made bread several times a week and sewed the majority of our clothing. I know most people have fond memories of their Grandmother kneading bread dough and canning Strawberry Jam but this was my Mom! And my sister and I cook just like my Mom did and in turn so do my nieces and yes we all sew and knit and the list goes on. "My Mother, Myself" is coming to mind which I think is a title of a book that I read sometime way back when.

But sometimes you just have to make something because it sounds like fun and that's how I feel about the Potato Chip Cookies. Although this is my Mom's recipe, I don't remember her ever making them. And when I asked her about it, she outright said and in a rather disgusted tone of voice "No and I don't think that's my recipe either." But one thing I did before I left Michigan was to copy, one at a time, all of my Mom's recipes in her handwritten 3" by 5" card file. And I know that I copied this recipe because I dated it and it has "Mom" written on the top line! LOL!

I've wanted to try the Potato Chip Cookies for a long time now but I honestly did not think I would like them. But they actually were a very buttery, rich cookie that tastes great with my afternoon latte! I put the cookies in my Great Grama's Cookie Jar that always sits on my kitchen counter and the jar was empty within three days! So I wasn't the only one that thought they were good!

Potato Chip Cookies

1 cup butter
1/2 cup white sugar
1 egg yolk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2/3 cup crushed potato chips
1 cup chopped pecans

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together butter and sugar until smooth.

Add the egg yolk and vanilla and mix in the crushed potato chips and pecans. Gradually stir in the flour until just blended.

Drop by rounded spoonfuls on a parchment lined baking sheets. Criss-cross the top using a fork dipped in water.

Bake until edges are lightly browned. Cool on racks.

This is an unbelievable hoot! I just had my first potato chip cookie last Wednesday. I vowed I would find a recipe. And here it is! How funny. They are absolutely delicious. Thank you so much for posting this.

seems like an odd ingrediens in cookies but I sure would like to try, the problem is the chips as I stopped buying thema while ago- this will however give me a reason to get a package .-)

Too funny Michelle! My Mom WAS the 1960's cook, but my grandmothers were definitely not and I'm like them. We tease all the time about Mom being the only Italian mama ever who really can't cook! (though she sees herself as an Italian Martha Stewart-shhhhh)

I made these years ago, you know how recipes "catch on" and eveybody makes it and then it goes away! Thanks for sharing! Hey did you ever make that hot pineapple, cheddar cheese, and cracker cassrole? I made it years ago and rediscovered while looking through my old recipe box! What fun!

Love the recollections about mom! I have an old cookbook that would have been used by her generation and it has that recipe in it and all the chiffon pies your little heart desires! Great recipe.

I read the title of this posting and thought, "Really?" then figured it would be one I'd just delete. But my goodness do those look good. Buttery and Pecanie and scrumptious. Bother! Not I want to try them ;-p

I was a child of the sixties and seventies and to this day don't think of Tuna Casserole except to think of the crushed potato chips on top. Macaroni noodles, tuna, cream of mushroom soup, peas, a SMALL amount of dryed minced onion (my dad is an extreme anti onion person), and crushed potato chips on top. An A-Typical 60's casserole :-}

"My" Kate will be done with this semesters classes in three weeks, and she only has one class this summer, so just yesterday she told me that in about three and a half weeks we are going to start doing a lot of cooking and baking together. If I am still battling this darn Vertigo, she can do all of the getting pans in and out of the oven. There are a couple of "our fav's" we want to make, and then we are going to venture into trying a bunch of the recipes one or the other of us have saved while blogging. This recipe is now on that list!!!!!

So making these. My father taught me how to make potato chip pancakes... or was it waffles... i don't remember but after I make these, I am finding that recipe and whipping up a batch. Viva la potato chip!

Thank you so much for the cookie recipe! I received the ingredients in a jar as a gift one time but didn't have the recipe. I made them up and Wayne one of our neighbors was over the moon for him. Since yesterday, the 16th, was his 81st birthday, I think I'll make him a batch today! NOW that I have the recipe! Thank you again!

We never had a TV dinner either, and I only remember Cheerios! I remember begging for Jiffy Top Popcorn.
The cookies look delicious. My mom didn't bake much when we were little..4 kids and she did everything herself...plus I had a sister who was in a wheelchair her whole life, so she didn't have time to bake...Nice to have your mom's recipes.

haha...my mom wouldn't buy tv dinners either...and no captain crunch or poptarts in her pantry. She didn't bake though (and would use a box cake mix) but she cooked every night. yep...needlework, sewing, crocheting....it's all there! :)
What a funny recipe. I would never have imagined potato chips in a cookie recipe! they do look good

I read potato chips and was thinking "Oh no, one of those American ingredients that I can't easily get my hands on", when I suddenly realized that it probably means just those potato chips that you snack on in front of a movie, right?

I love your story about your mother. My mother was like that too, only she would have been old enough to be your grandmother. I had ambitions, but didn't really make it ...
