Pomegranate Molasses Cookies!


Haven't the Olympics been fun so far! Maybe it's just me but I cried right along with Lindsey Vonn when she won the Gold Metal in the Women's Downhill. I was just so happy for her! So thrilling to work so hard and meet your own personal goal and to do it with so much grace and style!

And Shaun White...is this guy cute or what! Loved it when twitter went viral with "Super size it Shaun" as Shaun prepared for his second run at the Half Pipe. So exciting and with no fear what.so.ever and then to top it off with a Double McTwist 1260 and all in Super Hero Style! And he did it after hitting his head on the top of pipe wall during a practice run! Unbelievable!!

I'm not a big fan of David Letterman but Shaun's commentary is wonderful. Please take a minute to view the below video.





I don't know about you but this winter weather is getting ridiculous and thank goodness I have my baking and the Olympics to keep me sane, otherwise I'd be climbing on the roof and waving a white flag of surrender for sure! I'm not a big Milk and Cookies person, but a tall, cold glass of milk with some chewy Molasses Cookies seemed like the perfect treat while watching the Olympics.

I used my Mom's Molasses Cookie Recipe but of course I had to tweak it a bit! And sorry Mom but I think my tweaked Pomegranate Molasses Cookies are beyond delicious!

Pomegranate Molasses Cookies
Recipe adapted from my Mom

1 c sugar
3/4 c. shortening (I used butter)
1 egg
4 TBL Molasses (I used 1 TBL Molasses and 3 TBL Pomegranate Molasses)
1 tsp Vanilla
1 tsp cinnamon
1 tsp ginger
2 tsp baking soda
2 1/4 c. flour

Mix all ingredients. Chill dough for at least an hour. Makes ball into size of walnut and roll in coarse white sugar. Place balls of cookie dough on baking sheet lined with parchment paper. DO NOT PRESS DOWN. Bake at 350 degrees until bottoms are just slightly browned about 10-12 minutes.

Michelle, pomegranite molasses sounds incredible! Where do I get it?? I am having so much trouble since we moved to NC finding things that are readily available in NY. Yum!

Pomegranate Molasses is always stocked in a Middle Eastern Store. But I picked up several bottles at my grocery store that I shop at weekly. Pomegranate Molasses has been popular for a while now, so many grocery stores are now stocking it.

You can make sure own by slowly reducing 100% Pomegranate juice until it's thick and dark. Do be careful though because it will burn easily. I reduce many juices and use them as flavoring rather then vanilla.

I haven't had time to watch much of the olympics but I did enjoy the opening ceremony...thought it was beautiful and very soul touching (I'm partial to canada cuz my mom's side of the family is from there)
As for your cookies.....I really would like one of those!! (or 2 or 3 or more). As a matter of fact, I think I'll go bake some cookies right now :)

Yummy looking cookies, I can taste them!!! I'm with you, I never developed the Letterman craze....but I adore Shaun White, we have been watching him snow and skateboard for years. I have a 19 year old son who does both as well. When my daughter lived in Alaska we went to visit and snowboarded for 7 hours. My son has been on double black diamond at Alieska, Steamboat and telluride. I understand the "no fear" I just can't do it!

Pomegranate Molasses is quite popular so check at your local grocery store first. If not there see if you can find a local Middle Eastern Store.

Shaun ROCKS! I love his personality. And of course he is awesome on the board. I have been enjoying most of the olympics too. And...........I am so ready for spring to get here, but after the "fool" sping this weekend, we are back to cold. I did enjoy the little tease. Most ridiculous winter yet.

What a great idea! It's easy to find pomegranate syrup in Sweden nowadays, not only in the Middle Eastern shops but also in larger supermarkets.

We have 2 feet snow and very cold, although my Leonberger loves it, I've had enough. I'm not a sports fan, but I couldn't agree more about the baking to maintain sanity!

You really impressed me here! What a fantastic idea to use pomegranate molasses for the American-style cookies! Brilliant! You know in Lebanon different types of molasses are used for baked goods but never pomegranate. This is truly innovative, bravo!

I never knew, Michelle! Always wondered how some people get their cookies coated so beautifully with sugar crystals. Now I do! Those cookies are PERFECT. I follow the Winter Olympics on and off too ... the sport that really fascinates and amuses me to no end is curling!!! LOL!
