TWD -- Super-size it!



I wanted to join Tuesdays with Dorie in Feb. '08 but I was neck deep in a major renovation of our home and just could not commit to the recipe schedule. Then when we finally finished the house and I had time for Dorie, the blog roll was closed.


But just last week on St. Patrick's Day, it was announced "for one day only" the TWD blog roll was open for new members and I jumped at the chance. I was happy to see that my first official recipe for TWD would be Blueberry Crumb Cake because I already had this particular recipe bookmarked in my book!

I have 2-8"by8" pans. One is metal and about 25 years old and exactly 8"by8" and I have a newer Emile Henry pan but it is a bit bigger about 8 1/2" by 8 1/2". I decided to bake the crumb cake in the older 8"by8" pan and I wished I had baked in the bigger Emile Henry pan. I figured the crumb cake would rise quite a bit because the recipe called for 2 tsp of baking powder. But I did not think it would rise quite this much. My lord it kept rising and rising and finally started running over the sides of my pan!

Oh, I am so glad to see you here at TWD! And your cake turned out really lovely...mine did not get done in the middle, and by the time the knife came out clean, the outside was brown and too dry. I will need to tackle this one again as I have seen plenty of others who managed this recipe quite well...yours among them! Great job, and welcome to TWD! It's nice to see a familiar face!

That's one tasty looking crumb cake there! I'm a big fan of the Emile Henry too, and want to expand my bakeware collection. So far I'm baking most of my pies and quiches with a 9" (blue) pie dish, and crumbles on a 12" by 8" lasagna dish. Which other 2 or 3 bakeware would you recommend I get to have a most versatile baking collection? Quiche, souffle, gratin, lots of forms, shapes and sizes to choose from... Thanks a lot and keep on the good work!

Chiara, I really like either baking in clay or glass. And I get some of my best results baking in Corningware French White. It's not expensive and there's many different sizes and shapes.

I'm buying a new 8by8 pan and it will be corningware.

I've been thinking of writing up a post on bakeware and how it effects the baking process. But it will be a 3-4 weeks before I'm done. Lots of research and revisions.

Welcome to TWD! Congratulations on finishing your big remodel; what an accomplishment. I baked my cake in my Emile Henry pan. I am such a big fan of this bakeware! I got my first pan about a year ago and I intend to keep adding to my collection.
